Maple Balsamic Roasted Sweet Potato and Kale Salad with Spicy Pepitas

Alas, the best tasting foods are usually also not so good for you. Enter the sweet potato and kale salad. I peeled and diced the sweet potato into 2 cm pieces:

Then roasted it for half an hour at 400 F. For the kale, I quickly sauteed it with a bit of oil. I think you can just give it an oil massage if you want. It would keep the kale a much brighter colour than applying heat. For the pepitas, I mixed up a bit of lime juice and maple syrup with some spicy salt and roasted them in the oven until they were sticky. My intent was for them to give a bit of a spice kick but the spicy salt was not enough so next time I’ll add some ground chili as well. For a quick dressing I made up a bit more of the stuff in the jar and just poured it over top the finished salad.sweetpotato

    So you can eat squash seeds but you’re allergic to squash??

      oh wait…yes…I can eat the seeds and I can also eat the squash if it is thoroughly cooked aka pumpkin pie..
      there is a protein in the squash flesh that doesn’t like me. It gets obliterated with the heat.

    I would rock that salad. I am fiending kale like a crazy man ATM. And poutine always sounds like it should be poutine my belly!!

      we were laughing at my daughter (we always laugh at our kids=parents of the year) because she pronounced Putin as poutine.
      I’m not a big kale fan…but damn this was good! I could eat it every day.
