Last week was a bit of an emotional rollercoaster. I got some great news to start the week which then turned into a huge letdown. Then, near the end of the week, I got this really super amazing news. I was the freestyle category winner in the Canada wide Canadian Lentils Recipe Revelation Challenge. I was floored and in shock. I never in a million years would have thought I could create an original recipe using an ingredient I barely cook with (except for daal) let alone win a prize for it!
I entered four of the five categories and I did make an attempt at the fifth but I started too late in the competition to finish it. Hey Grazza…it was based on your Pork filet with lentils, tomatoes, and salsa verde. Anyway, here is a rundown of the four recipes I entered in the competition; click the links below each picture for the recipes.

It was a great way to end the week for sure. I knew I was a winner no matter what because in the end I created four lovely recipes and discovered that my family really enjoyed lentils.
