Australia Day Lamingtons

When we lived in Western Australia, we mourned the absence of perogies. I ended up making a few batches to eat when we were missing the tastes of home. Now that we are back in Calgary I am missing some very unique Australian treats. January 26 is Australia Day. The day is usually celebrated by getting together for one of two quintessential Aussie past times; either a picnic or a barbeque.  A day on the river banks or beach, followed by ‘crackers’ (or fireworks) as darkness sets in.  I’m not talking about tossing a couple of snags or prawns on the barbie, or even fancy sandwiches. Australians bring out all sorts of lamb bits, seafood, salads and sweet treats. They make quiches and puddings and tarts. They know how to celebrate their national day for sure.

In celebration of Australia Day, today’s post features ‘Lamingtons’. You make a vanilla sponge cake, cut it in pieces, cover them in liquid chocolate icing and then roll them in coconut flakes. Not difficult at all, but extremely messy. Especially when children are involved. And, they always seem to be when playing with chocolate is part of the recipe!

Though the recipe seemed simple enough, it was a hours long process for us. I decided to make two batches and we ran out of coconut halfway through. During the ‘absence of coconut’ period, we ate dinner and took a trip to Costco. Since I wasn’t about to buy a Costco-sized bag of shredded coconut we ended up making yet another trip to another grocery store. Note: if you run out of coconut during the ‘lamination’ process (haha), do not continue covering the cake pieces in chocolate. It will dry out and the coconut will not stick.

      Ha! I should have added a disclaimer to the blog…**no mail orders allowed** LOL. I did post the recipe in the recipe section and they really aren’t as difficult to make as you would think. Give it a go!
      Mal..have a great 52nd birthday, maybe Jodi will surprise you 🙂
